Short And Sweet. Strawberry Tarts.

Monday. Rain. To-do list the length of my arm (not short).

I need music and something sweet.

Strawberry Tarts

Ingredients:

1 1/4 cups sliced fresh strawberries
2 cups heavy whipping cream
1/3 cup confectioners’ sugar
1 teaspoon vanilla extract
6 Mini graham cracker crusts, like Keebler’s
Garnish: 12 fresh strawberry quarters and fresh mint leaves

Directions:

1. In the container of an electric blender or food processor, place sliced strawberries, and process until smooth.

2. In a medium bowl, combine cream, sugar, and vanilla; beat at high speed with an electric mixer until soft peaks form. Add 1/2 cup strawberry puree, and beat just until stiff peaks form.

3. Pipe or spoon whipped cream mixture into graham crusts. Drizzle remaining strawberry puree over tarts. Garnish with strawberry quarters and mint leaves, if desired.
