Chicken And Leek Pasta Bake

End of winter, start of spring casserolley thingy. You want this for dinner. Casserolley…..silly.

Chicken and Leek Pasta Bake

Ingredients:

2 Tbs butter
1.5 lbs boneless chicken thighs
2 leeks, chopped
1/4 cup white wine
1.5 cups light cream
1 tsp thyme leaves, chopped
sea salt and pepper
1 cup chopped basil
1 lb penne
1 cup grated Parmesan
1 cup grated mozzarella

Directions:

1. Melt butter, add chicken and cook for 5 minutes until browned. Add leeks and cook another 5 minutes. Add wine and cook two more minutes. Add cream, thyme, salt and pepper. Cook about 2 minutes longer until sauce is thickened. Remove from heat and stir in basil.

2. Cook pasta. Drain and add to chicken mixture. Stir well and place in a greased 13×9 baking dish. Top with cheeses and broil for about 3 minutes until golden.
