Irish Potato Chip Cookies

No, these cookies aren’t really Irish, but the saying goes that “Everyone’s Irish on St. Patrick’s Day”. That said, I made them honorary Irish just for the post day. Not so far off since potatoes continue to be a staple of a truly Irish diet. My husband decided to grow potatoes the summer before last. We ate A LOT of potatoes last winter.

Back to the cookies. Irish or not, these cookies are a great chocolate chip variation. They are crisp and the potato chips lend an interesting flavor twist. I had some Terra Chips on hand which I thought would give some fun color to the recipe, which it indeed did.  So I decided to make half of the batter with Cape Cod Potato Chips and half with the Terra Chips. I liked both versions.

Potato Chip Cookies

Ingredients:

1 cup butter, softened
1 cup sugar
1 cup light brown sugar
2 eggs
2 cups flour
1 tsp baking soda
1 cup semisweet chocolate chips
1/2 cup chopped nuts (I used pecans)
2 cups crushed potato chips

Directions:

1. Preheat oven to 350℉. Line baking sheets with parchment.

2. In a large bowl, beat butter, sugars and eggs with mixer until well blended.

3. On low speed, beat in flour and baking soda until blended. Stir in chocolate chips, nuts and potato chips.

4. Place 3/4 inch balls of dough about 2 inches apart on prepared baking sheets. Bake 10 to 12 minutes until golden around the edges.

Makes about 60 cookies

Two of my all time favorite songs (it’s a long list) are from these two Irish bands. Whipping Boy, out of Dublin, called it quits in 1999. The Ghost Of Elvis is from their third and last album. I always hear “and he trips” instead of “thrills” which makes me smile every time.

The Thrills, also from Dublin, formed in 2001. Likewise they have three (really great) albums out and have been praised on Dublin radio for their ‘handsome little bodies’. Nice. My kind of band. And this is my kind of song. “Ooh, Girl, I say Ooh”. Catchy as all get out. Unfortunately, we all know what happened to Corey Haim. I’ll admit, the song, released in 2004, was a tad more fun while Mr. Haim was still alive.
