The Wearing Of The Green Curry Salmon

If you have read a few of my older posts, you will know that I love to indulge myself in a flight of ideas. Well, this video came from a flight of search ideas.

I thought it would be fun to post a silly Irish video. I don’t know what that might have been, but my internet surfing wasn’t coming up with anything worth your time nor mine. There was one cartoon of St. Patrick, in a bar, smashing a snake’s head repeatedly with his pint glass. Funny after the first bloody strike, but that’s about it.

So after some more searches of deranged leprechauns and funny Irish step dancing clips, up popped this video of an Irish TV ad. I’m not joking when I said it popped up.

There. Are you as at a loss for words as I am? Let’s quietly read the recipe shall we.

(Note: Sorry that this is not a recipe for a wee crowd. It makes a lot.)

Salmon With Green Curry

Salmon ingredients:

4 lbs salmon fillet
Olive oil and sea salt for drizzling
1 lb snow peas, blanched
1/4 cup cilantro leaves
2 Tbs basil leaves, chopped
1 1/2 Tbs black sesame seeds
Steamed jasmine rice to serve

Curry sauce ingredients:

3 cups each of coconut milk and chicken stock
1/3 cup Thai green curry paste
1 banana
1 Granny Smith apple, quartered
2 stalks of lemon grass, smashed with flat side of a chef’s knife and chopped into long pieces
4 kaffir lime leaves
3 inch piece of ginger, peeled and coarsely chopped
1 Tbs black sesame seeds

Directions:

1. Combine all ingredients for the curry sauce in a heavy, large saucepan. Bring to a simmer over medium heat and reduce to about half, which will take about 2 hours.

2. Strain the sauce into another pan and keep warm.

3. Preheat the oven to 450℉. Arrange salmon on a baking sheet and drizzle with olive oil. Sprinkle with salt. Roast for 12 to 20 minutes until it is opaque at the center of the thickest portion.

4. Place portions of the salmon and jasmine rice on dinner plates. Pour over some sauce. Add snow peas, cilantro, basil and sesame seeds.

Serves 10
