How about a Lytle Lemon Broccoli Pasta?

I have so many recipes waiting to share that I thought I would throw in a quick post today for a really easy pasta dish. I also wanted to make sure that you are listening to Jason Lytle.

Jason Lytle first came onto my radar when a friend put the Grandaddy song “He’s Simple He’s Dumb He’s The Pilot” on a mixtape for me years ago. I was obsessed with that song for the longest time and still love it to bits. Jason Lytle’s solo album Yours Truly, The Commuter was one of my favorite albums of 2009. His latest, ‘Music Meant To Accompany The Art Of Ron Cameron’, is definitely out there. Lytle himself describes the album as “a bunch of shit”. It’s fantastic, messy, weird. I love it and can’t stop playing the song “D.U.I. BBQ Checkpoint”. Definitely go check it out as well as his other stuff if you haven’t already.

You’ll probably have this pasta on the table before the three songs are done.

Lemon Broccoli Pasta

Ingredients:

1 lb pasta (I used penne)
2 oz butter
3 cloves of garlic, sliced
2 heads of broccoli, chopped
1 Tbs lemon zest
2 Tbs lemon juice
1/2 cup shredded parmesan, plus extra to serve
sea salt and cracked black pepper

Directions:

1. Cook the pasta in boiling water according to package directions. Add broccoli for the last 5 minutes of cooking time. Drain and keep warm.

2. Add butter and garlic to the pasta cooking pot and cook for 1 minute. Return the pasta and broccoli to the pan with lemon zest, lemon juice, cheese, salt and pepper. Mix to combine. Top pasta with extra cheese to serve.

Serves 4 to 6

    Perfect for Meatless Monday. (I might add some leftover chicken, too, for a change-up, because we order chicken broccoli penne at restaurants sometimes.)
    And I really should get out the Grandaddy cds I have and re-listen. It’s been awhile!

    Favourite broccoli pasta is with anchovies melted into their oil in the pan, then crushed garlic softened in that, then the steamed broccoli tossed in that, then the pasta mixed in, and then the whole lot dressed with parmesan and chili oil. Nigel Slater does a bowl of pasta with just lots of lemon juice, some olive oil and lots of parmesan which I’ve never been quite brave enough to try.

    I made this last night, Tricia. Very quick and easy even with one child wrapped around each leg. And delicious!! The rare sight of my eldest devouring broccoli nearly made me weep.

    I read this in Family Mag. in a doctor’s office. This is similar, but they used 6 cloves of garlic, mushrooms, broccoli, sautaued in a little olive oil and then put in 1/3 cup of the pasta water. They added some cuntilli beans (a can of white beans for protein) the juice and zest of one lemon was added and then the cooked penne was tossed in with more pasta water to make more sauce as needed. I haven’t tried it yet, but wanted the recepie just to be sure. Sounds great for any time, but just in time for lent.
