Quick Pepperoni Calzones

These pepperoni calzones are quick, delicious and fun. Make them for dinner or to snack on while watching some Seinfeld.

Ingredients:

1 cup chopped pepperoni
1/2 cup pasta sauce with meat
1/4 cup shredded mozzarella cheese
1 loaf (1 pound) frozen bread dough, thawed
1 to 2 tablespoons milk
1 tablespoon grated Parmesan cheese
1/2 teaspoon Italian seasoning
Pizza sauce to serve, optional

Directions:

1. Preheat oven to 350°F.

2. In a small bowl, mix pepperoni, pasta sauce and mozzarella cheese.

3. On a lightly floured surface, divide dough into four portions. Roll each portion into a 6-inch circle. Top each with 1/3 cup pepperoni mixture. Fold dough over filling and pinch edges to seal. Place on a parchment lined baking sheet.

4. Brush milk over top of calzone. Sprinkle with Parmesan cheese and Italian seasoning.

5. Bake 20-25 minutes or until golden brown. Serve with some pizza sauce for dipping, if you like.

Earlier in the month I posted a song that had a lyric from ‘You’re The One That I Want’. So how weird that I stumbled across this version of the song today while doing an internet search of Danielle Duval, who has a new album coming out this spring.

Ms. Duval’s version is everything that I love about a great cover. She completely reinvents the song. The result is brilliantly slinky and soulful.
