There’s a bunch of information out there on the origins of mud pie. I’m just interested in eating it.

Frozen Mud Pie mixes layers of ice cream and chocolate syrup in a chocolate cookie crust. Top with some whipped cream and cherries and you have a fab dessert. So easy and the bonus is it can be made well ahead.

Ingredients:

15 cream-filled chocolate sandwich cookies, crushed
1⁄4 cup butter, melted
2 pints chocolate chip ice cream or 2 pints coffee ice cream, softened (I went with the chocolate chip)
1⁄4 cup chocolate syrup, divided
Whipped cream and cherries to serve, if you like

Directions:

1. Combine cookie crumbs and butter. Press onto the bottom and up the sides of an ungreased 9-inch pie plate. Refrigerate for 30 minutes.

2. Spoon 1 pint of ice cream into crust. Drizzle with half of the chocolate syrup. Top with remaining ice cream and drizzle with remaining syrup.

3. Cover and freeze until firm. Remove from the freezer 10 minutes before serving. Garnish with whipped cream and cherries if desired.
