That was unexpected!
Moving along to this hot recipe.
Greek Spiced Almonds are super easy to make. Roast the nuts, then warm briefly with the spices. What I love about the recipe, aside from being really yummy, is that the roasted almonds absorb the oil so are not greasy.
Greek Spiced Almonds
Ingredients:
2 cups whole unsalted almonds
2 tabelspoons olive oil
1 teaspoon dried oregano
1 teaspoon dried rosemary
¼ teaspoon garlic powder
½ teaspoon dried lemon peel
Kosher salt
Directions:
1. Heat oven to 400°F.
2. Spread the almonds on a baking sheet and toast until fragrant, about 15 minutes.
3. Put roasted almonds into a sauté pan. Add olive oil, oregano, rosemary, garlic powder and lemon peel. Toss the mixture over heat to coat with the oil. Spread onto a baking sheet, sprinkle with kosher salt and serve when cooled.

Some Greek inspired nuts beg for some Greek indie pop. Indiependents, out of Athens, deliver perfectly with their song ‘The Weather Man’. And timely since tomorrow’s forecast is 90% snow. Aaah…that’s Vermont in late April for ya.
Check out Indiependents on Facebook and Bandcamp where you can name your price for their music.
Cheers!
