I also ❤️ today’s recipe for Crispy Hot Chicken Salad. It has plenty of crunch from celery, water chestnuts, almonds and potato chips. Swiss cheese and mayo lend a nutty creaminess to this easy pleasing dish.
Crispy Hot Chicken Salad
Ingredients:
9 ounces chopped cooked chicken breast
2 cups thinly sliced celery
8 ounces sliced water chestnuts, drained
1/2 cup chopped almonds
1/3 cup chopped green pepper
2 ounces diced pimientos, drained
2 tablespoons finely chopped onion
2/3 cup shredded Swiss cheese, divided
1 cup mayonnaise
2 tablespoons lemon juice
2 cups crushed potato chips
Directions:
1. In a large bowl, combine the chicken, celery, water chestnuts, almonds, green pepper, pimientos, onion and 1/3 cup cheese.
2. In a small bowl, combine the mayonnaise, lemon juice and salt. Stir into chicken mixture and toss to coat.
3. Transfer mixture to a greased 8-inch square baking dish.
4. Bake, uncovered, at 350°F for 20 minutes.
5. Sprinkle with potato chips and remaining cheese.
6. Bake 10-15 minutes longer until heated through and cheese is melted.
Serves 4
