Grilled Veggie Pizza

More pizza today. Nothing insane here. Just grilled goodness.

My friend Carole gave me this recipe along with the tips for working with the dough. I found the prebaking step especially helpful as it ensured that the dough didn’t shrink and become unmanageable when placed onto the grill.

Carole’s toppings were inspired by what was fresh in the garden. The broccoli is especially delicious on the pizza. I couldn’t resist adding a bit of pepperoni, but leave it out to go total veggie. Adjust the topping quantities to suit your tastes.

Grilled Veggie Pizza

Ingredients:

2 (1 lb each) prepared rounds of pizza dough
Sliced white mushrooms, sautéed in butter
Pizza sauce
Cherry tomatoes, chopped fresh
Sliced pepperoni or Canadian bacon
Basil, chopped
Broccoli, chopped, steamed in microwave with a little water for 1 minute
Italian seasoning
Salt and pepper to taste

Directions:

1. Warm pizza dough in microwave for 20 seconds (this makes it easy to spread). Spread each round onto a greased pizza pan.

2. Prebake crust briefly, about 4 minutes, in 375℉ oven (so it can be easily slid onto grill).

3. Add toppings, sprinkle with seasonings, then place on grill over medium heat. Cook about 10 minutes or until toppings are hot and cheese is melted.

    Just seeing this post! I’m glad my tips were helpful. I have a pizza peel but can’t figure out how to use it properly. I think prebaking it does help. Reminds me to plant the garden soon! Now, if I can just eliminate the woodchuck…….
