I don’t even know what that means.

I do know that I have been on a bit of a crumble roll lately. There was this Gingersnap Crumble Ice Cream Tart and this Rosy Apple Crumble and now today’s Rhubarb Crumble Slice all in the past 12 days.

Crumbles, whether in cookie form or the stuff of buttery dessert toppings, are so freakin’ delicious and so easy to make.

Rhubarb Crumble Slice is a particularly good crumble recipe. The rhubarb layer has some vanilla added which is the most brilliant thing. I had no idea it was such a match for the tart fruit. Then, of course, there is the buttery crust and the buttery topping that sandwiches the rhubarb filling. Heaven.

Rhubarb Crumble Slice
Rhubarb Crumble Slice

Ingredients:

1/3 cup (75g) caster sugar
1 1/2 cups (225g) flour
1/2 teaspoon baking powder
1 egg, lightly beaten
100g butter, melted
Rhubarb Filling (recipe follows)
Crumble Topping (recipe follows)

Directions:

1. Preheat oven to 180℃/350℉.

2. Place the sugar, flour, baking powder, egg and butter in a bowl and mix to combine. Press into the base of a lightly greased 20cm x 30cm/8 x 12 inch tin lined with non-stick baking paper.

3. Bake for 20 – 30 minutes or until golden and firm.

4. While the base is cooking, make the rhubarb filling and crumble topping.

5. Spoon the rhubarb over the cooked base and top with the crumble topping.

6. Bake for 35 – 40 minutes or until golden. Cut into bars and serve warm or cooled. Store in refrigerator.

Makes 16 bars

Rhubarb Filling

Ingredients:

400g rhubarb (about 6 stalks), trimmed and chopped
3/4 cup (165g) caster sugar
1 teaspoon vanilla extract

Directions:

1. Combine the rhubarb, sugar and vanilla. Set aside.

Crumble Topping

Ingredients:

1 1/2 cups (225g) flour
1/3 cup (75g) caster sugar
150g cold butter, chopped

Directions:

1. Place the flour and sugar in a bowl and mix to combine. Add the butter and use your fingertips to rub it into the flour mixture until it resembles coarse breadcrumbs. (You can also do this in a food processor.)
