Quick Pickled Jalapeño Rings

Last week I shared a recipe for Slow Cooker Salsa Chicken which I garnished with homemade Pickled Jalapeño Rings. I promised the recipe and here it is.

If you’re a fan of pickled jalapeños, you’ll love how easy it is to make them yourself. Prepared this way, the sugar tempers the spicy heat of the peppers and they retain some crunch.

This photo shows some of the leftover Slow Cooker Salsa Chicken reheated and served over rice. Nice.

3/4 cup water
3/4 cup distilled white vinegar
3 tablespoons white sugar
1 tablespoon kosher salt
1 clove garlic, crushed
1/2 teaspoon oregano
10 large jalapeño peppers, sliced into rings

1. Combine water, vinegar, sugar, kosher salt, garlic, and oregano in a saucepan over high heat. Bring mixture to a boil, stir in jalapeño peppers and remove from heat. Let mixture cool for 10 minutes.

2. Pack peppers into jars using tongs, cover with vinegar mixture, cover, and refrigerate until needed.

Makes 2 (8-ounce) jars

“Idle” is the first single from ‘Choir of Echoes’, London-based Peggy Sue’s third full length album to be released on January 27, 2014 through Wichita Recordings and Yep Roc Records.

A lovely slow acoustic start gives way to insistent drums and guitars. Really good.

“Let the devil find a place for these restless bones.”
