Isn’t this one of the creepiest photos you’ve seen? Ew.
If you are going to dress up your prawns, make sure you start with this recipe. It is a simple, but very irresistible version of Fried Rice. Another tried and true dinner in less than one half hour.
Egg Fried Rice With Prawns And Peas
Ingredients:
250g (about 1 1/2 cups) basmati rice
3 Tbs vegetable oil
2 garlic cloves, minced
1 red chilli, seeds removed and chopped
2 eggs, beaten
200g frozen peas
1 bunch green onions, finely sliced
1 lb medium prawns
1 Tbs soy sauce, plus extra for serving, if you like
Directions:
1. Put the rice in a saucepan with 600ml water. Bring to the boil, cover, then simmer for 10 minutes or until almost all the water is absorbed. Leave off the heat, covered, for 5 minutes longer.
2. Heat 1 Tbs oil in wok or large frying pan. Add prawns and stir-fry until almost cooked through. Remove to plate.
3. Heat remaining oil in the wok. Add the garlic and chilli, then cook for 10 seconds, eyeing carefully so that it doesn’t burn.
4. Tip in the cooked rice, stir-fry for 1 minute, then push to the side of pan. Pour the eggs into the empty side of the pan, then stir them to scramble. Once eggs are just set, stir in the peas and green onions. Cook for 2 minutes until the peas are tender. Add the prawns and soy sauce, heat through, then serve with extra soy sauce on the side, if you like.
