Mixed Greens With Bacon and Maple Syrup Vinaigrette

Sort of silly, but kind of cool.

If you are looking for a different dressing for your mixed greens, this one is a keeper. Of course, being from Vermont, I totally loved the maple syrup addition.

Mixed Greens With Bacon and Maple Syrup Vinaigrette

Ingredients:

100g streaky bacon or pancetta, thinly sliced
1 tsp Dijon mustard
1 tsp cider vinegar
½ tsp maple syrup
4 tsp extra-virgin olive oil
150g mixed leaves, such as baby spinach, watercress and rocket

Directions:

1. In a small bowl, whisk the 1 tsp mustard, vinegar and maple syrup together, then gradually whisk in the olive oil to form a smooth, thick dressing. Season with a little salt and pepper, then set aside.

Serves 6
