Blackberry Pineapple Mojito

Oh My! All I wanted was something funny to share about mint. Now I need a drink to get these two out of my head.

If you need a drink, too, why not give this Blackberry Pineapple Mojito a try? It’s got all of the allure of a regular mojito, with the added bonus of all that fruit to give it a super summery flavor.

Ingredients:

2 teaspoons sugar
3 blackberries
3 small chunks fresh pineapple
6 or 7 fresh mint leaves, plus a sprig for garnish
1 tablespoon fresh lime juice, plus a wedge for garnish
1/4 cup light rum
1/4 cup seltzer

Directions:

1. For simple syrup: Put sugar and 2 tsp water in a glass bowl and microwave on full power for 15 seconds, or until sugar is dissolved.

2. Drop blackberries, pineapple, and mint leaves into a sturdy glass and crush to a pulp with a spoon. Add the simple syrup, lime juice, and rum.

3. Pour the contents into an old-fashioned glass and then back into first glass; repeat until thoroughly mixed, then pour back into old-fashioned glass. Add ice cubes and seltzer; stir. Garnish with sprig of mint and lime wedge.

Makes one mighty fine cocktail

So it was kind of sad when Run/Lucky/Free decided to part ways. (I wrote about the band here.)

But, you know what? Talented musicians with more music in them are going to go on and record other great tunes and that is an exciting thing.

Stampede Road is proof of that. It’s a new project for Daniel Crichton, guitarist from Run/Lucky/Free.

Two tunes in and I am sold. Their debut single and B-side were recorded in Fochabers, Scotland during a snowy March (now doesn’t that sound just perfect!) and will be launched later this month on the 21st during the afternoon at Edinburgh’s Oxfam Music Shop located in Stockbridge.

Here is the absolutely gorgeous, ‘The Ghost And I’.
