A sure fire way to get your day off to a good start is to wake up to a tasty breakfast that takes almost no time at all to make.

The scrambled eggs here get their “perfect” moniker from how creamy they are. A good dose of sour cream and cheddar cheese make them over the top good.

Then there is the ham butter.

Ham. Butter. Put them together and you get the easiest, hearty spread for warm biscuits.

Perfect Scrambled Eggs With Biscuits And Ham Butter

Ingredients:

8 large eggs
2 tablespoons sour cream
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
3/4 cup grated cheddar cheese
4 biscuits, warmed
Ham Butter (recipe follows)

Directions:

1. In a medium bowl, beat the eggs, sour cream, 1 tablespoon water, and salt and pepper to taste until fluffy.

2. Melt the butter in a nonstick frying pan over low heat. Add the egg mixture and cook, stirring occasionally, until almost set; stir in the cheese and cook, stirring, until the eggs are just cooked through.

3. Split the biscuits in half and fill each with about 1 tablespoon of the ham butter. Serve with the scrambled eggs.

Serves 4

Ham Butter

Ingredients:

1 cup cooked country ham, chopped
4 tablespoons unsalted butter, softened

Directions:

1. In a food processor, grind the ham into small pieces. Add the butter and pulse until combined. Transfer to a bowl, cover and refrigerate until ready to use.

On Twitter this morning I saw mention of a band called Echo Arcadia and thought that sounded like a band worth checking out.

Yes. Definitely the perfect music to start my day.

A press mention from EdinburghSpotlight.com had this to say: “Echo Arcadia’s tasty portions of indie-pop come highly recommended from us and we’re already looking forward to the next helping.”

I take that as a clear sign that Echo Arcadia are meant to be in my kitchen. Also, that Fresh Prints joke…that came from the band’s Facebook page. C’mon, that is another sign!
