How can scrambled eggs not be amazing with the addition of pepperoni and cheese?
No surprise here.
Frying the pepperoni first makes all the difference. It is slightly crisped and has a more intense flavor.
Everyone chez moi loved these scrambled eggs. It might be one of my favorite versions ever.
1 teaspoon oil
1/2 pound beef pepperoni, sliced
2 tablespoons butter
3/4 cup milk
Salt and freshly ground black pepper
1 cup grated white or yellow cheddar cheese
2 tablespoons green onions, sliced on the bias
1. Heat oil over medium-high heat in a large skillet. Fry pepperoni, transfer to paper towels to drain, pour off fat and wipe out pan.
2. Melt butter in pan over medium heat. Whisk together eggs and milk, add to pan, and season with salt and pepper. Loosen edges to prevent eggs from sticking. When eggs begin to set, sprinkle with cheese and top with pepperoni and green onions. Remove from heat. Let stand for about a minute (eggs will continue to set off the heat).
