Candy Surprise Cake. No Surprise That I Love This Song By Skatan.

Harrison Ford…still cool.

I love cakes that have a surprise inside when you cut into them. Remember the Piñata Cake? Or the dramatic Red Velvet Tuxedo Cake?

How about the other Red Velvet Cake…the Strawberry Shortcake one? And then there was that Graffiti Rainbow Layer Cake and the super cool Flag Cake. And my favorite…Rainbow Cake.

Well this Candy Surprise Cake might be the easiest of the bunch to make and certainly one of the most fun.

Choose your favorite cake flavor and your favorite candy to fill the cake with. Decorate with cheerful sprinkles.

Cut into the cake and watch everyone’s eyes light up as the candy spills out.

Candy Surprise Cake

Ingredients:

One boxed cake mix in your choice of flavor (I used Funfetti) pkus the water, eggs and oil to make mix according to instructions on box
Candy to fill center of cake, about 1 cup (I used Skittles)
Buttercream Icing (recipe follows)
Sprinkles to decorate

Directions:

1. Preheat oven to 325℉.

2. Prepare cake according to package and pour into a greased and floured 2 quart glass bowl such as this one.

3. Bake for 1 hour and 10 minutes or until a tester inserted into center comes clean. Cool 15 minutes.

4. Run a knife around edges to loosen, and gently ease cake out onto a wire cake rack. Cool completely.

5. Once cool, trim flat edge even and set on serving plate with dome side up.

6. Cut a round opening in the top of the cake, gently pulling the cake out to form a hollow core. Leave about an inch of cake at the bottom. Save a small round of cake and discard the rest (Don’t really discard it…you know, eat it).

7. Pour candy into the center of the cake and place the reserved small round of cake to cover it up.

8. Prepare icing and spread over entire cake. Use a star tip to pipe a decorative border around the base. Scatter sprinkles over the whole cake, if you like.

Buttercream Icing

Ingredients:

6 cups confectioners’ sugar
1 lb butter, softened
2 tsp vanilla extract
2 to 4 Tbs whipping or heavy cream

Directions:

1. In a large bowl, cream together sugar and butter on low speed. Mix until well blended. Increase speed to medium and beat for another 3 minutes.

2. Add vanilla and cream and continue to beat on medium speed for 1 minute longer. Add more cream, as needed, to obtain desired consistency.

This makes one mighty fine Birthday Cake.

I was looking for a song about Surprises and I have one with that title in my collection by the band Skatan.

However, when I was checking out more of Skatan’s music, I came across this song that I liked even better.

Beautiful piano and even lovelier vocals. No surprise here that I love this.
