LOL French Style.

My son and I made these Palmiers (elephant ears) for an assignment he had for French class.

If you use store bought puff pastry these are one of the easiest desserts around.

The Palmiers bake up sweet and crisp from the caramelized sugar. So yummy. Have some with a steaming pot of tea or alongside a bowl of ice cream.

Palmiers

Ingredients:

Puff pastry (I used frozen which is just as good as any homemade I have ever tried…and EASY)
Granulated sugar

Directions:

1. Thaw puff pastry dough according to package directions.

2. Preheat oven to 400°F.

3. Sprinkle about 1/4 cup of sugar over your work surface. Roll out the puff pastry to about 10 x 12 inches. Sprinkle another 1/4 cup of sugar over the dough.

4. Roll up the left vertical side inward, stopping in the middle of the dough. Roll up the right side of the dough. The two rolls should be meeting at the middle and touching. (Like a business letter). Press the two sides together gently and let the dough chill for at least 30 minutes.

5. Starting at one end, cut off pieces of the log, in slices about 1/2 inch in thickness. Lightly sprinkle sugar onto each side. Pinch and press the sides of the two rolls together to ensure that they don’t unroll during baking.

6. Place on large parchment lined baking sheets or a baking sheet lined with a Silpat. They will increase in size, so leave plenty of room between each cookie.

4 Set the tray in the middle of the oven. Bake for about 6 minutes or until the sugar has caramelized on the bottom.

5. Turn over and sprinkle with more sugar.

6. Bake 3 minutes more, until nicely caramelized. Cool on rack.
