Orecchiette With Sun Dried Tomatoes, Bacon and Basil

You know what would go perfectly with this pasta dish?

Some Merlot.

MmmmmmMerlot.

Mmmmm creamy, cheesy pasta studded with bacon. I absolutely love sun dried tomatoes, too. I usually use the oil packed kind, so I forget how dreamy just plain dried tomatoes are.

Orecchiette with Sun Dried Tomatoes, Bacon and Basil

Ingredients:

1 lb Orecchiette pasta
1/2 onion, diced
1 Tbs olive oil
4 slices thick cut bacon, chopped
3 garlic cloves, minced
1/2 cup sun dried tomatoes (not packed in oil), chopped
1/4 cup fresh basil, chopped into a chiffonade
1/2 cup mascarpone cheese
1/2 cup Parmesan, finely grated

Directions:

1. Cook pasta according to package directions.

2. Cook bacon in a skillet until crispy. Drain on paper towels and set aside. Discard all but 1 Tbs of bacon grease. Add olive oil, onion and sun dried tomatoes to skillet. Sauté until onion is soft. Add garlic and basil. Sauté a few more minutes.

3. Drain pasta, reserving a cup of pasta water and put into a large serving bowl. Add bacon mixture and cheeses. Toss with the pasta. Add some of the pasta water, if you like more of a sauce, and mix together thoroughly.
