Pad Thai Pizza

If you’re looking for something different for dinner, try this. My kids loved it. I loved it.

Pad Thai Pizza

Ingredients:

1 tube of refrigerated pizza crust or your favorite recipe for pizza dough
2 Tbs creamy peanut butter
2 Tbs teriyaki sauce
1 Tbs Thai chili sauce (I used Sriracha because I had it on hand)
1 tsp honey
2 cups shredded cooked chicken
1 cup mozzarella cheese
1/2 cut shredded carrot
1/3 cup bean sprouts
1/4 cup chopped salted peanuts
1/4 cup minced cilantro
2 green onions, thinly sliced

Directions:

1. Pat dough into a greased 15 x 10 inch pan. Build up edges slightly. Bake at 425℉ for about 5 minutes or until edges are lightly browned.

2. Meanwhile, in a small bowl, whisk together the peanut butter, teriyaki sauce, chili sauce and honey. Place chicken in another bowl; add half of the peanut butter mixture and toss to coat.

3. Spread remaining peanut butter mixture over crust. Top with chicken and cheese. Bake for 10 to 15 minutes or until the crust is golden brown.

4. Sprinkle with remaining ingredients and serve.
