Frijoles Rancheros

Here is a version of Frijoles Rancheros that is fast and easy. I got the recipe from a mini cookbook put together by my son’s preschool class a few years ago. Each family submitted a few of their favorite recipes and the teachers compiled them. I love stuff like that.

Frijoles Rancheros

Ingredients:

4 bacon slices, chopped
1 onion, chopped
1 red bell pepper, diced
1 (16 oz) can refried beans
1 (16 oz) can pinto beans, drained
1/3 cup chives
1/4 cup biscuit mix
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp hot pepper sauce
3 slices cheddar of pepper jack cheese
Shredded cheese, pickled jalapeños, tortilla chips to serve

Directions:

1. In a medium skillet, brown bacon, onion and bell pepper for about 7 minutes until tender.

2. Stir in remaining ingredients except cheese. Pour into a 2 quart baking dish. Top with cheese.

3. Bake at 375℉ for 20 minutes or until cheese melts.

Serve with additional cheese, jalapeños and tortilla chips if desired.

Young Galaxy are a Canadian band with a new album just out in February of this year. Queen Drum is from their second release, Invisible Republic, and it is a cracking good song. I hear strains of Sarah McLachlan in there. Love the drums.
