Can you believe it? Ice Cream Bread?? Two ingredients? I couldn’t wait to try this recipe. It worked and it was yummy. The bread is extra fun in that you can choose whatever flavor of ice cream that you like. I decided to go with Ben & Jerry’s (of course) Cinnamon Buns because it was a new flavor. Imagine Heath Bar Crunch or Cookies And Cream. Or Rocky Road. Or Cookie Dough…..
Ice Cream Bread
Ingredients:
1 pint ice cream, softened
1 1/2 cups self-rising flour
Directions:
1. Grease and flour 1 (8 inch) loaf pan.
2. Preheat oven to 350℉.
3. Stir together ice cream and flour, stirring just until flour is moistened.
4. Bake for 45 minutes or until a tester comes out clean. Cool on a wire rack.
Adapted from Southern Living Magazine. (They experimented with some low fat ice creams and were disappointed with the results. Some flavors they loved were Strawberry, Butter Pecan and Rum Raisin.)

Seriously??? Ice cream and flour only? Did you use the whole pint (which I’m off to google to convert to ml, btw)? Man…I want to live in Vermont so I can live off B&J’s caramel cinnamon bun!!
I know, can you believe it? I used the whole pint (except for the tablespoon that I spooned into my mouth). Mmmm.
Ok Tricia, the ice cream bread is in the oven. We used chocolate fudge brownie. I’ll let you know how it goes

Do you let the ice cream get really soft?
Yes, kind of the softness of butter before you cream it for a cake or icing. I’ve also seen recipes for ice cream bread where the ice cream is melted (like here) so it appears you can’t go wrong with really, really soft!
