These Crunchy Tuna Wraps are a great way to elevate humble tuna salad to top notch picnic fare. The addition of water chestnuts and red bell pepper add the crunch. Spinach tortillas add a fun punch of color as well as flavor.
Crunchy Tuna Wraps
Ingredients:
6.4 ounces light tuna in water
1/4 cup chopped celery
1/4 cup chopped green onions
1/4 cup sliced water chestnuts, chopped
3 tablespoons chopped sweet red pepper
2 tablespoons mayonnaise
2 teaspoons prepared mustard
2 spinach tortillas (8 inches)
1 cup shredded lettuce
Directions:
1. In a small bowl, mix the first seven ingredients until blended.
2. Spread tuna mixture over tortillas then sprinkle with lettuce. Roll up tightly to serve.
Serves 2 (doubles easily)
