Salted Brown Butter Rice Krispie Treats

If this recipe sounds familiar, it is because I have made it before.

Before I bought The Smitten Kitchen Cookbook.

When I made Salted Brown Butter Rice Krispie Treats, I made the Smitten Kitchen recipe adapted by another blogger. It was supremely good and it contained chocolate chips.

But when I saw Deb Perelman’s photo of her crispy treats, I had to try them. The difference? She uses a square 8 inch pan instead of a 13 x 9 inch one (and no chocolate chips). The result is a batch of Rice Krispie Treats that are super tall which somehow makes them even more inviting.

Salted Brown Butter Rice Krispie Treats

Ingredients:

4 ounces unsalted butter
1/4 teaspoon coarse sea salt
10 ounces marshmallows
6 cups Rice Krispies cereal

Directions:

1. Lightly grease an 8 inch square baking dish.

2. In a large, heavy pot, melt butter and salt over medium-low heat. The butter will melt, foam, then become clear golden before finally starting to turn brown. Stir frequently and do not leave the butter unattended as it goes from perfect brown to burned very quickly.

3. As soon as the butter becomes a medium brown color, add the marshmallows and turn the heat down to lowest. Stir until the marshmallows have melted into a smooth mixture. Remove from heat and, working quickly, stir in the cereal.

4. Immediately turn out treat mixture into prepared pan. Gently press the mixture evenly into the pan.

5. Cool completely and into squares.

Makes 16 (2-inch) squares or 32 (1- x 2-inch) small bars

I did this yesterday!

It was my 11 year old son’s first roller coaster ride. What a way to start his coastering career! It is an incredible ride. So tall, so fast and such a frightening first drop. The body of water to the left as the train starts its first climb up makes it all the more terrifying.

I’ve ridden coasters for as long as I can remember, getting an early start at Coney Island. But, this is the first roller coaster I have ridden that had music coming out of the headrest, which I found both unnerving and exhilarating. The Bizzaro rap version that played yesterday was very similar to this one (a little Eminem/Led Zep and others mashup), except that just as the cars paused at the top before that initial drop there was the question asked, “Are you scared?”

Wow.

And yes. Definitely.
