Meatball Taquitos. New Music From Flight Of Ryan.

Italian meets Tex-Mex in these fun and easy Meatball Taquitos. The filling tastes like a meaty lasagna. It gets rolled up in tortillas which get all golden and crispy in the oven.

Meatball Taquitos

Ingredients:

12 frozen fully cooked Italian meatballs, thawed
2 cups shredded mozzarella cheese
1 cup whole-milk ricotta cheese
1 teaspoon Italian seasoning
12 flour tortillas (8 inch size)
Cooking spray
Warm marinara sauce

Directions:

1. Preheat oven to 425°F. Grease a 15 x 10 baking pan.

2. Place meatballs in a food processor and pulse until finely chopped. Transfer to a large bowl. Stir in cheeses and Italian seasoning.

3. Spread about 1/4 cup meatball mixture down center of each tortilla. Roll up tightly. Place on prepared pan, seam side down. (I was able to fit 10 rolled tortillas in a 13 x 9 inch pan. I put the remaining 2 on another small baking sheet.) Lightly mist tortillas with cooking spray.

4. Bake 15-20 minutes or until golden brown. Serve with marinara sauce.
