Swedish Chef Pancakes With Chocolate Chips And Raspberries

It’s Pancake Tuesday!

So let’s make some pancakes for dinner.

This recipe comes from a little cookbook put together by families whose kiddies were in a local preschool with my son back in 2006. It’s titled “Olivia’s Swedish Chef Pancakes”.

My daughter loves chocolate chips in her pancakes so we added those along with some raspberries. The result is fluffy pancakes packed with flavor. That’s about as good as it gets!

It’s also Mardi Gras, so a Hurricane Cocktail might be in order. I’m going to try this 5-Star recipe.

Swedish Chef Pancakes With Chocolate Chips And Raspberries

Ingredients:

1 1/2 cups flour (I used a combination of all-purpose and white whole wheat)
1 3/4 teaspoons baking powder
3 tablespoons sugar
1 teaspoon salt
1 1/2 cups milk
3 tablespoons melted butter
2 eggs
1 cup chocolate chips
3/4 cup raspberries (I used frozen)
Maple syrup, fruit and chocolate chips to serve, optional

Directions:

1. Mix dry ingredients together in a large bowl.

2. Whisk together the milk, butter and eggs.

3. Add wet ingredients to the dry ingredients and stir until smooth.

4. Stir in chocolate chips and raspberries.

5. Heat a griddle over medium heat and coat with cooking spray or some butter.

6. Pour 1/4 cupfuls of batter onto the griddle, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Sometimes it’s all about the album art for me.

I wanted to find some Swedish indie to go along with the pancakes. A little poke around Bandcamp and I spotted Trabant’s very interesting cover pic. I had a listen and…. Bonus! Very good indie pop, indeed.

“Aj, Aj, Aj” (translated: Ow, Ow, Ow) is the opening track. It doesn’t hurt the ears one bit.
