This is a mixed green salad, but not your typical one.

Instead of lettuce, chunks of cucumber, avocado and feta are tossed with mint and a lime vinaigrette. So simple, yet such a wonderful combination of flavor and texture.

Cucumber-Avocado Salad With Lime, Mint, And Feta

Ingredients:

3 cucumbers, peeled and cut into 1/2 inch pieces
Salt
2 ripe avocados, peeled and chopped into 1/2 inch pieces
1 Tbs plus 2 tsp fresh lime juice
1/2 cup chopped fresh mint
1/2 cup crumbled feta
2 Tbs extra-virgin olive oil

Directions:

1. Put cucumber in a colander. Sprinkle with salt and let sit for 30 minutes. Use paper towels to blot the cucumbers and remove salt and excess moisture.

2. Put avocado into a large bowl and toss with the 2 tsp lime juice.

3. Whisk together olive oil and the 1 Tbs lime juice to make dressing.

4. Add cucumbers, mint, and dressing to avocado and combine. Gently stir in the crumbled feta.
