Short and sweet and…..strawberry soda???
In these elegant cupcakes, strawberry soda replaces the water called for in the box mix. Sounds crazy, but it totally works.
The soda gives the cake a light strawberry flavor that is pretty irresistible and the cream cheese icing finishes things off with a terrific tang.
Ingredients:
1 box white cake mix
1 1/4 cups strawberry-flavored soda
Vegetable oil and egg whites called for on cake mix box
Red food color
1 container cream cheese icing
1/2 cup white candy sprinkles or non-pareils
Fresh strawberries, if desired
Directions:
1. Heat oven to 350°F.
2. Make, bake and cool cake mix as directed on box for 24 cupcakes, substituting soda for the water.
3. Stir a few drops of food color into frosting to tint pink.
4. Frost cupcakes with cream cheese icing (I used a plain round tip to swirl on) and shake sprinkles or non-pareils over.
5. Garnish with fresh strawberries if you like.
