Tomato And Feta Salad With Sticky Balsamic Dressing

Tomatoes get the star treatment in this fresh and bright salad. Basil is a natural partner for tomatoes. Throw in some salty cubes of feta and cloak it all in a sweet and tart balsamic glaze and you’ve got some salad perfection.

Tomato And Feta Salad With Sticky Balsamic Dressing

Ingredients:

1/2 cup (125ml) balsamic vinegar
1 tablespoon brown sugar
4 tomatoes, sliced
100g feta cheese
1/2 cup basil leaves
Sea salt and pepper
2 tablespoons olive oil

Directions:

1. Place vinegar and sugar in saucepan over medium heat. Bring to boil and cook 8 – 10 minutes until slightly thickened. Set aside to cool.

2. Arrange tomato, feta and basil on serving plate.

3. Drizzle with oil and the dressing. Sprinkle with salt and pepper.

Serves 4
