Q: What’s a Grecian urn?
A: It depends on what kind of work he does.
These are some mighty fine meatballs. All tucked into a thick tomato sauce laced with a hint of cumin. πολύ καλό.
Greek Meatballs (Soutzoukakia)
Ingredients:
1 lb ground beef
1 small onion, finely minced and divided
1 tsp salt
1/2 tsp dried oregano
1 clove garlic, minced
2 Tbs fresh parsley, chopped
1 egg
1 Tbs bread crumbs
Olive oil
8 oz tomato sauce
6 oz tomato paste
6 oz oz water
1 bay leaf
1/2 tsp cumin
1 pinch sugar
Directions:
1. Mix together the beef, 1/2 of the onion, garlic, salt, oregano, parsley, egg, and breadcrumbs. Form the mixture into oval-shaped meatballs.
2. Heat olive oil in a skillet and pan-fry the meatballs until they are browned on all sides. Remove meatballs to a plate.
3. To the skillet, add the remaining onion (and more oil if necessary) and cook until translucent. Add the tomato sauce, water, bay leaf, cumin, sugar and salt and pepper to taste. Bring the mixture to a low boil and add the meatballs. Simmer 10-15 minutes.
4. Serve meatballs and sauce over mashed potatoes or rice.
