So, today my husband and boys are going camping, while my daughter and I spend two nights at a culinary and spa resort up in northern Vermont.
His and hers and everyone VERY happy. I’m even taking a cooking class this afternoon on Summer Starters. Can’t wait!
When we go on long car trips, my husband does all of the driving.
I never sleep in the car, but if he EVER pulled something like this 1) We’d be dead, because I am one very excitable shotgun passenger or 2) He’d be dead for pulling something like this.
If you have a long car trip ahead of you, pack some of these Cinnamon Mini Muffins for a snack.
The muffins are really yummy warm, but equally good the next day when they taste like mini crullers.
Ingredients for muffins:
1 1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp allspice
1 egg
1/2 cup skim milk
1/3 cup butter, melted
Ingredients for topping:
2 Tbs sugar
1/2 tsp cinnamon
1/4 cup butter, melted
Directions:
1. Preheat oven to 400℉.
2. In a large bowl, combine first 6 ingredients.
3. Combine the egg, milk and butter. Mix well. Stir into dry ingredients until just moistened.
4. Spoon into greased mini-muffin cups.
5. Bake for 12-14 minutes.
6. For topping, combine sugar and cinnamon. Brush muffin tops with melted butter and sprinkle with cinnamon sugar.
Makes about 2 dozen
This is perfect road trip music. Play as loudly as the driver will tolerate.
