Tex Mex Beef Biscuit Cups

I plan our family dinner menus a week at a time. I’m a little Type A like that. Okay, I’m a lot Type A in general.

Well, the end of my boys’ baseball season this year seriously conflicted with my organizational requirements. Instead of sitting at my desk planning meals, I was behind the wheel of my car driving to practices and games.

So, one day during baseball season I had nothing planned for dinner. (Just reading that makes me shudder.) I knew I had some refrigerated biscuits on hand. You know the ones, the irrational fear inducers.

So, I dropped into the general store to pick up some ground beef because I remembered a really delicious and simple recipe called Barbecups. Biscuits baked in a muffin tin that are filled with a cheesy barbeque beef filling.

I get home and I have no barbeque sauce. Really? I look again. I always have that stuff hanging in the cupboard. Not that day.

Well, using what I did have on hand gave the recipe a Tex-Mex slant. It was even better than Pillsbury’s. My family inhaled every last crumb. I almost felt Type B for a minute. A New York Minute.

Tex Mex Beef Biscuit Cups

Ingredients:

1lb ground beef
2 Tbs Goodall’s steak sauce
1/2 cup medium salsa
1 Tbs brown sugar
1 (10oz) can refrigerated biscuits
1/2 cup shredded white sharp cheddar cheese
Crumbled tortilla chips

Directions:

1. Heat oven to 400℉ . Grease 10 muffin cups.

2. Brown the ground beef in large skillet; drain. Stir in steak sauce, salsa and brown sugar. Cook 1 minute to blend flavors.

3. Separate dough into 10 biscuits. Place 1 biscuit in each greased muffin cup; firmly press in bottom and up sides, forming 1/4 inch rim. Spoon about 1/4 cup of meat mixture into each biscuit lined cup. Sprinkle each with cheese and about 1 Tbs crushed tortilla chips.

4. Bake for 10 to 12 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.

Here is the original recipe from Pillsbury. These are seriously good, too.

1 tblsp instant minced onion or 1/4 cup chopped onion
1 Tbs brown sugar
1 (10oz) can refrigerated biscuits
1/2 cup shredded Cheddar cheese

Directions:

1. Heat oven to 400 degrees. Grease 10 muffin cups.

2. Brown the ground beef in large skillet; drain. Stir in barbeque sauce, onion, and brown sugar. Cook 1 minute to blend flavors, stirring constantly.

3. Separate dough into 10 biscuits. Place 1 biscuit in each greased muffin cup; firmly press in bottom and up sides, forming 1/4 inch rim. Spoon about 1/4 cup of meat mixture into each biscuit lined cup. Sprinkle each with cheese.

4. Bake at 400 degrees for 10 to 12 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.



I admit that the plan in this song is a lot more substantial than what to have for dinner. Just a bit more.
