Zucchini, Arugula And Shaved Parmesan Salad. Hey Ugly Club…See What You Started? :)

So, yesterday I am faffing around the internet (what else is new?) and I came across this Sleeveface from one of my fave bands, The Ugly Club. You might remember I wrote about them in this post.

Sleevefaces! I forgot about how fun they can be.

A few years back, on a snowy day, me and my kids pulled out my albums (Alvins, they called them in their digital age ignorance), and got down to some sleevefacing.

Late summer screams for ideas of what to do with all of those zucchini coming out of the garden.

This light and lovely salad is perfect. It is already flavorful without the dressing…full of the peppery arugula, the sweet zucchini and the nutty Parmesan. But the Balsamic Dressing just seals the deal.


Zucchini, Arugula And Shaved Parmesan Salad

Ingredients:

1 lb zucchini, sliced
1 lb arugula
3 oz shaved Parmesan cheese
Black pepper
Balsamic Dressing (Recipe follows)

Directions:

1. Arrange the zucchini and arugula on serving plate. Top with Parmesan.

2. Drizzle with dressing. Season with pepper.

Serves 4

Balsamic Dressing

Ingredients:

3 Tbs Balsamic vinegar
2 Tbs lemon juice
1 Tbs Dijon mustard
2 garlic cloves, minced
1/2 cup olive oil

Directions:

1. Whisk first 4 ingredients in a bowl. Gradually whisk in oil. Season to taste with salt and pepper.

Makes about 3/4 cup
