Caper Shrimp Phyllo Tarts

This time of year seems to teem with party and entertaining opportunities. These Caper Shrimp Phyllo Tarts are so easy, and yet so elegant, you’ll want to serve them at your next gathering.


Caper Shrimp Phyllo Tarts

Ingredients:

3/4 cup sour cream
2 Tbs chopped dill
1/2 teaspoon grated lemon peel
1 teaspoon lemon juice
2 (2.1 ounce) packages baked miniature phyllo dough shells (30 total)
2 tablespoons capers, drained
30 peeled, cooked small shrimp with tails on
Fresh dill sprigs

Directions:

1. In a small bowl, stir together sour cream, dill, lemon peel, and the lemon juice.

2. Fill phyllo shells with sour cream mixture (about 1 teaspoon per shell). Sprinkle with the capers.

3. Place 1 shrimp, tail up, in each cup. Garnish with small dill sprigs.

Note: Tarts can be made up to 2 hours ahead. Cover and chill.

Makes 30 tarts.
