Looking for a refreshing and different salad? Try this interesting Blueberry Romaine Salad.

Joining the blueberries are cashews and Swiss cheese. An unlikely combination that tastes really good together.

Blueberry Romaine Salad

Ingredients for dressing:

1/3 cup white vinegar
1/4 cup sugar
1 tablespoon chopped red onion
2 teaspoons poppy seeds
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash Worcestershire sauce
1 cup vegetable oil

Ingredients for salad:

1 package (10 ounces) hearts of romaine salad mix
1 cup cashews
1 cup shredded Swiss cheese
1 cup fresh blueberries

Directions:

1. In a small bowl, whisk the first eight dressing ingredients. Gradually whisk in oil.

2. In a large bowl, combine salad ingredients.

3. To serve, drizzle some of the dressing over salad and toss to coat. (You probably won’t want to use all of the dressing to keep things on the lighter side).

Serves 8
