Lemon, Coconut And Raspberry Impossible Pie

Impossible pies, where the magic of baking chemistry allows the ingredients to make their own crust, are some of the easiest to make. This Lemon, Coconut And Raspberry Impossible Pie is no exception. Melt, blend and bake your way to a custardy, fruity dessert with a sweet, crisp top and sides.

Lemon, Coconut And Raspberry Impossible Pie

Ingredients:

1 1/2 cups milk
3/4 cup (60g) desiccated coconut
50g unsalted butter, melted
1 Tbs vanilla extract
3 eggs
1/3 cup (50g) flour
2 Tbs lemon juice
1 cup (220g) sugar
3/4 cup (120g) frozen raspberries

Directions:

1. Preheat oven to 160℃/325℉.

2. Place milk, coconut, butter, vanilla, eggs, flour, lemon juice and sugar in blender. Blend until smooth.

3. Pour the mixture into a lightly greased 18cm (I used an 8-inch round) pie dish. Sprinkle with the raspberries.

4. Place pie on a large tray and bake for 40-45 minutes or until a tester in center comes clean. Cool before serving.
