Doritos Chicken Casserole

Mother teddy bear: “Would you like some dessert, dear?”

Baby teddy bear: “No, thanks. I’m stuffed.”

You’ll probably have that conversation when you make this yummy Doritos Chicken Casserole for your own teddy bears. I, for one, could not stop eating this creamy, crunchy cheesy meal. You had me at ‘Doritos’.

Doritos Chicken Casserole

Ingredients:

2 cups shredded cheddar cheese, divided
2 cups shredded cooked chicken
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 (10 oz) can Ro-tel tomatoes (canned tomatoes with mild green chiles)
1 (1 oz) packet taco seasoning
1 (11 0z) bag Doritos nacho cheese flavored tortilla chips, coarsely crushed

Directions:

1. Preheat oven to 350℉.

2. In a mixing bowl, combine one cup of cheese with other ingredients except Doritos.

3. In a greased 2 or 3 quart baking dish, put a layer of Doritos over the bottom. Spoon half of the chicken mixture over the Doritos layer. Repeat with more Doritos, the rest of the chicken, and end with remaining Doritos.

4. Top with remaining cup of shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.
