When I came across this recipe I could not wait to make it. The highly spiced burgers are marinated in tequila!

Marinated in tequila.

I had never tried a burger that was marinated in alcohol. I worried that the meat might break apart or that the marination would affect the grilling, but this was not the case.

Unfortunately, there was not much of a margarita flavor in the beef, but it was exceedingly moist and very tasty from all of the ingredients.


Margarita Burgers

Ingredients:

1-1/2 lb ground beef
1 small onion, finely chopped
2 cloves garlic, finely minced
3 Tbs cilantro, minced
1 Tbs paprika
1 Tbs chile powder
1 tsp cumin
1 tsp oregano
1 tsp allspice
1 tsp black pepper
1 tsp red pepper flakes
1 cup tequila
¼ cup lime juice
¼ cup orange juice
4 slices sharp cheddar cheese, optional
4 Ciabatta rolls

Directions:

1. Mix ground beef and next 10 ingredients in a medium bowl. Form four patties to fit the shape of the Ciabatta rolls.

2. Mix tequila, lime juice and orange juice in a shallow dish which can hold the four patties in one layer. Marinate at least two hours. Turn patties if not covered by the marinade.

3. Grill patties to desired doneness. Top with cheese (if using) for the last minute of cooking. Toast rolls.

4. Place one patty in each roll. Serve with your favorite toppings.
