Honey Butter Pork Tenderloin With Homey Mac & Cheese

I couldn’t help thinking that this piece of pork looks like an alligator.

Cooked this way, the pork was succulent inside with a rich, sweet glaze on the outside. Macaroni and cheese is a yummy side.


Honey Butter Pork Tenderloin

Ingredients:

4 Tbs butter
2 Tbs honey
1 1/2 pounds pork tenderloin
1/2 tsp Cajun seasoning
1/2 tsp black pepper
3/4 cup water

Directions:

1. Preheat oven to 375℉.

2. In an ovenproof skillet, heat butter and honey over medium heat until melted. Sprinkle pork tenderloin with Cajun seasoning and black pepper. Brown each side for 5 minutes in the honey butter. Lower heat if honey begins to burn.

3. Place skillet in oven and roast uncovered for 15 – 20 minutes, depending on thickness of pork.

4. Remove skillet from oven and transfer pork to a plate. Tent with foil.

5. Add water to the skillet and stir over medium heat. Simmer for about 5 minutes, until sauce is reduced slightly.

6. Slice pork on the diagonal and drizzle sauce over top to serve.

Homey Mac & Cheese

Ingredients:

2-1/2 cups uncooked elbow macaroni
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups 2% milk
20 ounces shredded sharp cheddar cheese, divided
2 tablespoons Worcestershire sauce
1/2 teaspoon paprika

Directions:

1. Preheat oven to 350°F.

2. Cook macaroni according to package directions for al dente.

3. Meanwhile, in a large saucepan, heat butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened. Reduce heat.

4. Add 3 cups cheese and Worcestershire sauce to saucepan and stir until cheese is melted.

5. Drain macaroni and stir into sauce.

6. Transfer to a greased 10-inch ovenproof skillet or baking dish.

7. Bake, uncovered, 20 minutes. Top with remaining cheese; sprinkle with paprika. Bake 5-10 minutes longer or until bubbly and cheese is melted.
