Mini Goat Cheese Tarts With Apple

These Mini Goat Cheese Tarts With Apple round out the collection of desserts I made for a Hunger Games themed party that I posted about here and here and here. The goat cheese is a nod to Katniss’ sister Prim, who makes the cheese with the milk from her pet goat. Prim also gives goat cheese to Peeta’s dad, Mr. Mellark, in exchange for bread from his bakery. Mr. Mellark uses the goat cheese to make apple and goats cheese tarts, hence this recipe.

Who knew that goat cheese buttercream could (would) be so delicious? The cheese gives the buttery icing a lively tang and wonderful depth of flavor. Tart apple is the perfect complement in these crispy, creamy bite sized treats.


Mini Goat Cheese Tarts With Apple

Ingredients:

Mini Fillo Shells
Goat Cheese Buttercream (recipe follows)
Apple, cut into small pieces ( I like the tartness of Granny Smith)

Directions:

1. Pipe or spoon the buttercream into the fillo shells. Top each tart with a piece of the apple.

Goat Cheese Buttercream

Ingredients:

6 oz goat cheese, softened
8 oz butter, softened
5 cups confectioners’ sugar
1 tablespoon milk

Directions:

1. In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and goat cheese at medium low speed until smooth.

2. Add confectioners’ sugar and milk and blend at medium speed until smooth.

This quantity is enough to frost a 3 layer (8 inch) cake. For the mini tarts I halved the quantity. I had enough buttercream to fill 30 mini fillo shells.
