This is one of those dinners. After just a few bites, my daughter is already asking me when I will make it again.

Easy, quick and delicious, I will definitely make this again soon and often. I loved the addition of taco seasoning to spice up this classic dish.


Speedy Taco Shepherd’s Pie

Ingredients:
1-1/2 pounds ground beef
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup water
1 (1 oz) envelope taco seasoning
8 ounces shredded cheddar cheese, divided
3 cups leftover or refrigerated mashed potatoes, warmed

Directions:

1. Preheat broiler.

2. In a large ovenproof skillet (You can use a pan that cannot go in the oven. Just transfer mixture to an oven-safe casserole before broiling), cook beef, onion and garlic over medium heat until beef is no longer pink, breaking up beef. Drain.

3. Stir in water and taco seasoning; heat through. Stir in 1 cup cheese. Remove from heat.

4. In a bowl, mix mashed potatoes and remaining cheese; spread over beef mixture.

5. Broil 4-6 inches from heat 2 to 3 minutes or until top is golden brown.

Serves 4
