All Day Slow Cooker Meatball Stew

If you know me, you will know that I am a HUGE fan of the show ‘Breaking Bad’.

If you are a ‘Breaking Bad’ fan yourself, you’ll know that last night was the series finale.

I was 2 episodes behind, so I did not watch last night.

Thank you DVR. I had the best morning.

I binge watched the final 3 episodes because there was no way I was leaving the house with a chance of running into spoilers on what ultimately happened.

What a series. So well written and acted. Check it out, if you have not already.

Nope. All of that had nothing to do with today’s Slow Cooker Meatball Stew. Well, maybe you could tie it together by saying I am a HUGE fan of this homey dish.

Throw the ingredients in your slow cooker (not to be confused with a meth cooker) and 10 hours later you have a richly flavored and hearty meatball stew packed with vegetables. I especially like that the broth is thickened at the end which gives it a wonderful rib-sticking texture.


All Day Slow Cooker Meatball Stew

Ingredients:

2 packages (12 ounces each) frozen fully cooked Italian meatballs
5 medium potatoes, peeled and cubed
1 pound fresh baby carrots
1 medium onion, halved and sliced
1 jar (4-1/2 ounces) sliced mushrooms, drained
2 cans (8 ounces each) tomato sauce
1 can (10-1/2 ounces) condensed beef broth, undiluted
3/4 cup water
3/4 cup dry red wine or beef broth
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1/2 cup cold water

Directions:

1. Place the meatballs, potatoes, carrots, onion and mushrooms in a 5 or 6 quart slow cooker.

2. In a large bowl, combine the tomato sauce, broth, water, wine, garlic powder and pepper; pour over contents in the slow cooker. Cover and cook on low for 8-10 hours or until vegetables are tender.

3. Combine flour and water until smooth; gradually stir into stew. Cover and cook on high for 30 minutes or until sauce is thickened.

Serves 8 (3 quarts)
