LOL. A 3 Ingredient Phrase.
3 ingredient cookies.
How can one not try a cookie recipe like that, especially when the ingredients include chocolate peanut butter and granola?
I tried it and I liked it.
My cookies were a bit on the crumbly side and I am not sure if that was because of the brand of Chocolate Peanut Butter I used, which was Good Karma Vermont Peanut Butter. (The recipe I followed recommended using either white or dark chocolate peanut butter from Justin’s or Peanut Butter & Co.) Didn’t really matter to me, though, since the cookies were so tasty, especially broken up and served over some ice cream.
Chocolate Peanut Butter Granola Cookies
Ingredients:
2 cups granola with nuts and dried fruit
1 cup chocolate peanut butter
1 large egg
Directions:
1. Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
2. Pick out the dried fruit from 1 cup of the granola and add the fruit to the remaining granola. Transfer the fruit-free granola to a food processor and pulse until finely ground; transfer to a medium bowl. Add the peanut butter, egg and a pinch of salt, if you like. Using an electric mixer, beat the mixture at low speed until smooth. Add the remaining fruit-filled granola and beat the cookie dough just until combined.
3. Form the cookie dough into 12 balls and arrange them on the prepared baking sheets. Flatten the balls with the tines of a fork to 3-inch rounds.
4. Bake one sheet at a time in the center of the oven for about 15 minutes, until the cookies are lightly browned around the edges. Let the cookies cool completely on the baking sheets.
