Fettuccine With Caramelized Onions, Bacon And Olives. PSY And Why? Are In The Kitchen.

Am I the last person on the planet to have heard of Gangnam Style? Has my head been in Scotland too long?

Well, let me tell you, I want to learn that dance. If only to just jump into the kitchen and scare the bejeezus out of my kids.

Caramelized onions are so good. Especially when they are slowly cooked in bacon grease. Meltingly tender, the onions are perfectly matched with the salty olives and smokey bacon. A perfect pasta dish for a cooler September night.


Fettuccine With Caramelized Onions, Bacon And Olives

Ingredients:

6 strips bacon, cut into 1/2″ pieces
4 Tbs olive oil
1 onions, quartered and cut into thin lengthwise strips
1 garlic clove, minced
1/4 cup pitted and chopped imported black olives, such as Kalamata
1 lb fettuccine or linguine
2 Tbs chopped parsley
Coarsely ground black pepper
Grated Parmesan cheese

Directions:

1. Cook the bacon in a medium skillet until partially browned; drain off most of the fat.

2. Add the olive oil; heat over low heat; add the onion; sauté until soft and edges begin to turn golden, about 8 minutes. Add the garlic; sauté 1 minute. Stir in the olives.

3. Meanwhile, cook the pasta in boiling salted water according to package directions. Drain. Toss with the onion and bacon sauce and parsley. Sprinkle with pepper and grated cheese.

Serves 4 to 5
