Today is my husband’s 50th Birthday.

As I told my brother-in-law, I cannot believe I am going to be living with a fifty year old man who isn’t my father.

Wow, the years just fly by now.

Twenty years ago I threw DaHub a surprise birthday party. I swore at the time that I would never do that again. I found the whole thing waaay stressful.

Well, last night I threw him another surprise party. And surprised he was! The nerves, tension, chaos and organization I had to deal with this past week were completely and utterly worthwhile.

There is nothing like seeing someone you love more than anything being happy. And happy we were celebrating a big birthday with some of the friends and family that mean the most to us.

Judging by the gifts, it looks like they know my husband pretty well.

I can’t wait until Happy Hour tonight.

Big birthdays deserve a BIG cake.

This Red Velvet Strawberry Shortcake is super easy to make, looks impressive and tastes fabulous.



Red Velvet Strawberry Shortcake

Ingredients:

1 box white cake mix
1 box red velvet cake mix (I couldn’t find this, so I used a box of King Arthur Flour’s Chocolate Cake Mix and Two Tbs of Red Velvet Bakery Emulsion added to the batter)
Whipped cream (I used 1 pint of whipping cream, which I whipped stiff, and added 8 oz Cool Whip for stabilization and sweetmess)
2 lbs fresh strawberries, chopped (I used about 3/4 lb for the cake layers and then scattered the remainder around the base of the cake)

Directions:

1. Bake 2 (8 inch) layers of white cake according to package directions.

2. Bake 2 (8 inch) layers of red velvet cake according to package directions.

3. Starting with the red velvet, added a fluffy layer of whipped cream, then a bunch of diced strawberries.

4. Repeat layers with white cake, second red velvet cake and second white cake layer.

5. Cover entire cake with whipped cream and use a decorating comb to line the sides, if you like.

6. Scatter remaining strawberries around base of cake.

Note: This is a very tall cake. Since it does not have dowels for stabilization, you don’t want to make the cake too far in advance or it might topple over. Thankfully, we sang Happy Birthday and everyone was served their cake before the remaining cake slumped over like a falling Tower of Pisa. A very delicious Tower, indeed.

Also, only the Birthday Boy got a ginormous slice with all four layers. I served smaller pieces, which were actually normal sized slices, to everyone else.
