Roadhouse Double Cheeseburgers with Marinated Red Onions. The Walkmen=Heaven.

Okay, I need to be quick here. I’m hosting a party for my husband’s work colleagues tonight. About 60 of them.

It’s 8:30 am. Is that too early?

Fortunately, I have been on task all week, so it should all go smoothly. And there is Champagne Fruit Punch and White Sangria to look forward to. And Peanut Butter Pie Shooters, Chocolate Key Lime Pie Tarts and Mini Bailey’s Cheesecakes….Recipes to follow shortly.

I have been wanting to share this burger recipe with you all for ages. Perfectly spiced beef that is oozing with cheese. The marinated onions are soooo good.

Roadhouse Double Cheeseburgers with Marinated Red Onions

Ingredients for burgers:

1 pound, 10 ounces ground beef (90 percent lean)
1 small onion, grated
2 cloves garlic, finely chopped
1 tablespoon chopped fresh parsley or basil
3 tablespoons grated Parmesan cheese
4 ounces cheddar or Monterey Jack cheese, cut into 1 x 1/2-inch pieces
olive oil for brushing
lettuce leaves
4 burger buns or country-style bread, toasted
fresh parsley or basil strips, to garnish

Ingredients for Marinated Red Onions:

2 red onions, thinly sliced
2 tablespoons cider vinegar
1 tablespoon brown sugar
1/4 teaspoon salt
freshly ground black pepper

Directions:

1. Prepare the marinated onions by combining all the ingredients in a small bowl. Cover and refrigerate for 3 to 4 hours, or overnight.

2. Place the beef in a large bowl, add the onion, garlic, parsley or basil, and Parmesan cheese, and lightly mix to combine. Shape into 8 patties. Place a cube of cheese on four of the patties and cover with the remaining patties, sealing the edges and flattening them to make 4 thick burgers.

3. Preheat an oven broiler. Arrange the patties on a greased foil-lined pan and brush the tops with oil. Cook for 6 to 8 minutes, or longer for a more well done burger, turning once. Just before the end of the cooking time, top each burger with a few more pieces of cheese and return to the broiler until the cheese has melted. (I grilled the burgers on a BBQ grill. Worked fine.)

4. Line lettuce on the bottom buns and top each with a burger and a little of the marinated onions. Garnish with parsley or basil, and serve immediately.
