Melting Snowman Cake Balls

It is no secret that I have a soft spot for melting snowmen…of the edible sort. They are so cute.

I tried using a Spice Cake/Cream Cheese Icing combo for the cake balls. The two taste great together, but my kids thought it a bit too Christmasey for March. The cake balls all got eaten, though.

Melting Snowman Cake Balls

Ingredients:

1 (18.25 ounce) boxed cake mix (I used Spice Cake Mix)
1/2 of a (16 ounce) can prepared frosting (I used Cream Cheese)
1 cup crispy chow mein noodles (for the arms)
Candy eyes (1/4 inch size)
Assorted decorative sprinkles (for nose and buttons)
Edible writer or melted chocolate in a piping bag (for mouths)
2 lbs white candy melts or white confectionery coating

Directions:

1. Prepare and bake the cake mix according to package instructions. Crumble the cake into a bowl. Thoroughly mix in frosting. Chill the mixture for at least 2 hours.

2. Using a melon baller, your hands, or a 1 inch scooper, form the mixture into 1 inch balls. Place the balls on wax paper. Chill for another 2 hours.

3. In a double boiler, melt one pound candy melts, stirring constantly. Or, in a tall, narrow container, microwave for 1 minute at 70% power. Continue to heat in 10 second intervals on high, stirring between intervals, until melted; be careful not to scorch.

4. On wax paper, pour a tablespoon of melted candy coating to make a puddle. Dip a cake ball into the coating and place onto the puddle. Decorate while coating is still wet.

In case you get bored dipping all of those snowmen, you can always make a bunch of plain dipped balls and cover with sprinkles.
