Mexican Fiesta Biscuit Bake

This video has nothing to do with anything in this post. I just thought it was really funny.

Nope!

This Biscuit Bake recipe can be changed up in so many ways. Just start with the biscuits and salsa and top with your favorite stuff. And cheese. Lots of cheese.

Mexican Fiesta Biscuit Bake

Ingredients:

2 Tbs butter
2 (10 oz) refrigerated buttermilk biscuits
1(16-oz) jar (1 3/4 cups) chunky salsa
6 oz shredded Monterey Jack cheese
6 oz shredded cheddar cheese
4 oz pimiento strips
1/2 cup sliced green onions
1 (2 1/4-oz) can sliced ripe olives, drained or 1/2 cup pimiento olives, chopped
1 cup salsa and pickled jalapeño slices, if desired

Directions:

1. Heat oven to 375°F.

2. Melt butter in oven in 13×9-inch glass baking dish or non-aluminum baking pan. Tilt to evenly coat dish.

3. Separate dough and cut each biscuit into quarters. Place biscuit pieces in large bowl; toss with 1 3/4 cups salsa. Spoon evenly into butter coated dish. Sprinkle with cheeses, piemento, onions and olives.

4. Bake for 35 to 45 minutes or until edges are deep golden brown and center is set. Let stand 15 minutes. Cut into squares; serve with additional 1 cup salsa and jalapeño slices.

Glimpses happened to come on when I was running this morning. The “I’m so tired” line suddenly sounded like another song to me. I racked my brains and, bam, this is the song I was reminded of.
