Flying High With Cashew Butter Chocolate Chip Bars

Now you certainly aren’t going to get any cashews on a typical airplane any time soon. Peanuts are dinosaurs. And don’t even get me started on requiring credit cards to buy anything in the air. Also, did you know I ALWAYS get the seat where the person in front of me insists on reclining until his seat back is crushing my 20 foot long legs and his head is close enough for me to check for lice? And lucky me gets the broken audio. And the annoying stranger next to me. I definitely feel Elaine’s pain in this clip.

Bake these cashew bars and pack them for your next flight. Your neighbors will be jealous. Just do it now before we have nut free planes. Or before they charge you to bring your own food on board.

Cashew Butter Chocolate Chip Bars:

Ingredients:

2 1/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 pound butter, melted
1 2/3 cups light brown sugar
1/3 cup sugar
1/2 cup cashew butter
2 eggs plus one extra yolk
3 tsp vanilla extract
1 cup coarsely chopped salted cashews
2 cups chocolate chips

Directions:

1. Preheat oven to 350℉ and butter a 13×9 inch baking pan.

2. Whisk together flour, baking powder, baking soda and salt.

3. In another bowl mix the butter, sugars, cashew butter, eggs, yolk and vanilla. When smooth add the flour mixture. Stir in cashews and chips.

4. Spread batter into prepared pan. Bake for about 30 minutes, or until top is just set. Cool and cut into squares.

The song I chose for The Contrast Podcast is this one by My Teenage Stride. I recommend blasting it while you wait 5 hours in line to get through security. You can put it on repeat.

Now for the scariest song about flying ever. I get chills every time I have a listen. Especially when she sings/talks (stalks?) the line “This is your Captain. We are going down. We are all going down together”.
